Monday Bloody Monday! Tonight my hubby won’t be home until around 10pm. My daughter is off on a babysitting job and won’t get home until around 10pm too. So tonight I am on my own. My first thought was ‘sweet, cereal for dinner’ but who am I kidding? I need more than cereal BUT I also don’t want to spend a lot of time cooking just for me. Then it hit me! Udon Noodles…and stir fry veggies! BAM! Quick, easy and filling so I hit the floor running; 15-minutes later – Ta-Da! Dinner!

I love this recipe because you can almost wing it and throw in anything you want. Super easy, try it tonight!

Spicy Udon Stir Fry

Spicy Udon Stir Fry has Udon noodles, like fat spaghetti, tossed with stir fried chicken, tons of veggies and a spicy flavor packed sauce. Quick, easy and healthy what more could you ask for?

Ingredients

Sauce

  • 1 Tbsp sesame oil
  • ¼ cup low sodium soy sauce
  • 1 Tbsp brown sugar
  • 1 Tbsp honey
  • 1 Tbsp Sriracha sauce
  • 1 clove garlic minced
  • ¼ cup water

Stir Fry

  • 1 Tbsp sesame oil
  • 1 Tbsp olive oil
  • 4 cups cooked Japanese Udon noodles
  • 1 - 2 chicken breasts chopped into small 1 inch pieces
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 tsp Mam D's House seasoning
  • 1 red bell pepper thinly sliced
  • 1 can baby corn
  • 2 cups broccoli florets
  • 1 cup mushrooms sliced
  • ½ cup snap peas
  • 1 4 oz can bamboo shoots
  • 1 4 oz can sliced water chestnuts
  • 1 cup bean sprouts
  • 2 green onions chopped

Instructions

  1. In a small bowl whisk all the sauce ingredients together.
  2. In a large skillet, heat the olive oil and the sesame oil.
  3. Add the garlic and chopped onion to the skillet; cook for about a minute.
  4. Add the chicken, seasoning, bell pepper and mushrooms; sauté until the chicken begins to brown.
  5. Add broccoli, baby corn, bamboo, water chestnuts and snap peas; cooking for about 5 more minutes.
  6. Add the cooked udon noodles to the skillet and pour sauce over the noodles.
  7. Toss and remove from heat.
  8. Add bean sprouts and green onions.
  9. Serve.
