Yeah, me either! This year has flown by, crawled by, challenged me in ways I did not ever think I would be and left me in awe over everything that has passed. So, needless to say that means that Christmas is going to be here in the blink of an eye. Think about it, in the next eight weeks what will be accomplished? The election will be over, a winner announced, Thanksgiving, holiday parties, shopping, decorating, Christmas parade, you name it.
So y’all, I’m here to help! Just like last two years, for the next eight weeks, I will be featuring some of my favorite holiday baking recipes in this countdown to Christmas baking series.
To start this series off, I am bringing you a recipe that is not only good for Christmas but will be a welcome treat on Thanksgiving as well. Pumpkin Puff Cookies. Seriously one of my all-time favorite cookies, and truly not just for the holiday season. They are so good. These homemade pumpkin cookies are full of delicious pumpkin puree and all the sweet pumpkin pie spices. The soft centers, a great texture and flavor, so good! Seriously we ate this entire batch in under 24 hours.

Pumpkin Puff Cookies
- ½ cup butter softened
- ¼ cup brown sugar
- ½ cup granulated sugar
- 1 egg
- ½ cup pumpkin puree
- ¼ teaspoon allspice
- ¼ teaspoon nutmeg
- ¼ teaspoon cloves
- ½ teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups all-purpose flour
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a bowl, cream butter, brown sugar, and granulated sugar together until well combined.
Add in the egg, and mix until well combined.
Add in pumpkin puree, mixing until combined.
Next, add in allspice, nutmeg, cloves, cinnamon, vanilla extract, baking powder, baking soda, and salt. Mix until everything is combined.
Add in flour and mix until flour is well incorporated.
With a small-med sized cookie scoop (about 1 1/2 - 2 Tbsp), scoop dough and place evenly on your prepared cookie sheet.
Bake for about 12-13 minutes, or until cookies are set. Allow to cool completely.
