Summer = Sweet Corn

As soon as fresh corn shows up in the stores, I start buying it. In fact, we probably make corn on the cob at least once a week. Of course, buying corn from the farmers market is better, and getting it straight from the farm is the absolute best, right?! But today the farmers market was my best friend and we scored!

Now when I was a kid, my mom would always boil the corn on the cob, and on occasion I make it this way, especially when it’s too hot outside to grill. But lets face it, after you have corn grilled on the bar-be-que, boiled corn just fails in comparison!

As most of you know, there are many ways to grill corn, and you can mix up the seasonings whenever you want. This is my go-to recipe for grilled corn because it’s so simple, the seasoning is perfection and turns out perfect every time. Thanks to my brother-in-law, Josh for sharing this with me a few years ago because every since….well, its a keeper!

Pablano Grilled Corn on the Cob

Sweet on the cob corn seasoned with garlic, butter, pablano peppers and grilled in the husk is a quick and easy summer side dish that is tender, sweet, juicy and goes well with anything else you cook on the grill.

Ingredients

  • 6 ears of corn on the cob still in the husk
  • 2 pablano peppers seeded and diced
  • 1 stick of butter softened
  • 3 cloves of garlic minced
  • Fresh ground pepper to taste
  • Salt to taste

Instructions

  1. Pull the husk down the cob (do not tear the husk completely off) remove silk; continue for each ear of corn.
  2. Divide the butter up evenly between the ears of corn and spread over the kernels.
  3. Next divide the chopped pepper between the ears of corn; place the peppers onto the corn; top with garlic (divided between the ears); sprinkle with salt and pepper.
  4. Pull the husk back into place and press to seal around the corn.
  5. Place on the upper rack in your BBQ grill; grill for 5 minutes or so at a time; rotating at least 4 times.
  6. Serve.
