Green Chili Scrambled Breakfast Taquitos are green chili egg scramble with cheese and sausage links rolled up and baked inside a corn tortilla. A simple, delicious and easy grab and go breakfast.
What Are Breakfast Taquitos?
A taquito literally means a small taco. Taquitos are a Mexican food dish consisting of a small rolled up tortilla with some sort of filling such as beef, chicken, and cheese.
My taquitos are of course for breakfast, so they are filled with eggs, sausage, green chilies and of course some cheddar cheese. Taquitos are also usually fried, but who needs fried taquitos when they’re just as good baked?
I’ve been making these for years! Prior to my hubby it was just me and my kiddos. Every morning I would drive my daughter, my niece and nephew to school on my way to work. So every other weekend I would make up a huge batch of these and then that is what the kids would eat on the way to school and who am I kidding?? I would have a few too! They were perfect size for the kids and easily manageable, especially in the car.

Green Chili Scrambled Breakfast Taquitos
- 12 eggs
- ¼ cup milk
- 1 4 oz can chopped green chilies
- 1 medium onion chopped
- 3 cloves garlic minced
- 16 sausage pre-cooked links heated
- 16 6- inch corn tortillas
- 2 Tbsp olive oil
- 2 cups cheddar cheese shredded
- salt and pepper to taste
- salsa optional
- sour cream optional
Preheat oven to 400°F.
Lightly spray a sheet with non-stick spray.
In a large bowl whisk the eggs and milk together, set aside.
In a large skillet over medium-high heat, add the oil; when hot add onion, green chili and garlic; cook until onion is tender stirring continuously so garlic doesn’t burn.
Once onions are soft add the egg mixture to the skillet and cook until eggs are scrambled.
Lay a tortilla flat and top with cheese, some egg mixture and a sausage link and salt and pepper to taste.
Tightly roll up the tortilla and place it in the baking dish; repeat with remaining tortillas and ingredients.
Bake for about 15 - 20 minutes or until tortillas are nicely golden brown.
Serve with salsa.
